  • 1 teaspoon Dried Oregano
  • 1 tablespoon Chili Powder adjust to taste
  • Salt to taste
  • Black Pepper to taste
For the Chili
  • 1 can Diced Green Chiles canned
  • 2 cups Cooked Shredded Chicken rotisserie for convenience
  • 1 can White Beans drained
  • 2 cups Frozen Sweet Corn
  • 4 cups Low-Sodium Chicken Broth
For the Creamy Finish
  • 8 ounces Cream Cheese softened
  • 1 cup Shredded Pepper Jack Cheese
  • 1/2 cup Sour Cream
  • 1 tablespoon Lime Juice
  • Fresh Cilantro optional

Method
 

Step 1: Prep Aromatics
  1. Chop onion and mince garlic. Place them in the Crockpot. Add cumin, oregano, chili powder, salt, and black pepper. Stir to combine.
Step 2: Add Main Ingredients
  1. Add diced green chiles, shredded chicken, drained white beans, and frozen sweet corn. Pour in the chicken broth and stir until well combined.
Step 3: Cooking Phase
  1. Cover the Crockpot and cook on low for 4 to 6 hours without stirring to maintain texture.
Step 4: Finish with Dairy
  1. Add cream cheese, stirring to melt. Fold in pepper jack cheese, sour cream, and lime juice.
Step 5: Serve
