  • 2 cups Kidney Beans Can substitute with black beans.

Preparation
  1. Chop one large onion, mince three cloves of garlic, and dice two bell peppers. Set aside with two cups of kidney beans.
Cooking
  1. In a large pot over medium-high heat, brown one pound of ground beef for 5-7 minutes, breaking it up as it cooks.
  2. Lower heat to medium, add chopped onion, garlic, and bell peppers, sauté for 5 minutes.
  3. Sprinkle in two tablespoons of chili powder and one teaspoon of cumin, stir for 1 minute.
  4. Add one can of crushed tomatoes and kidney beans, followed by two cups of beef broth, stir to combine.
  5. Bring to a boil over high heat, then reduce to low and simmer uncovered for about 40 minutes.
  6. Taste and adjust seasoning with salt and pepper, then serve hot.
