Step-by-Step Instructions
  1. In a large mixing bowl, whisk together 2 eggs, 1 cup of Greek yogurt, your choice of sweetener, and 1 teaspoon of vanilla extract until the mixture is smooth and creamy.
  2. Gradually sift in ¾ cup of all-purpose flour and 1 teaspoon of baking powder into the wet mixture. Gently fold the batter until just combined.
  3. Preheat your oven to 350°F (175°C) while you prepare the ramekins.
  4. Lightly grease four ramekins and divide the batter evenly among them, filling each about three-quarters full.
  5. Place the filled ramekins in the preheated oven and bake for approximately 25 minutes until golden brown and puffed up.
  6. Remove from the oven and allow to cool for about 5-10 minutes before serving with your choice of toppings.
