Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add the noodles and cook until al dente, about 6-8 minutes. Drain and set aside.
  2. In a mixing bowl, whisk together gochujang, soy sauce, honey (or maple syrup), and sesame oil until smooth. Set aside.
  3. Heat avocado oil in a large skillet over medium-high heat. Once shimmering, add chicken and cook for 6-8 minutes until golden and cooked through.
  4. Add minced garlic and grated ginger and sauté for 1 minute until fragrant.
  5. Reduce heat and add drained noodles. Pour the gochujang sauce over and gently toss for 2 minutes until well coated.
  6. Stir in fresh baby spinach and cook for 1 minute until wilted.
  7. Remove from heat, serve in bowls, and garnish with sliced green onions and toasted sesame seeds.
