- In a blender, combine chopped cucumbers and freshly squeezed lime juice, blending on high until smooth and creamy, about 30-45 seconds.
- Using a fine mesh sieve, place it over a large pitcher. Pour the blended mixture into the sieve, pressing down with a spoon to extract maximum juice.
- Add coconut water, honey or agave syrup, and a pinch of sea salt to the strained juice in the pitcher. Stir until the sweetener is dissolved.
- Taste the beverage and adjust sweetness if needed, adding more honey or agave syrup to your liking.
- Cover the pitcher and refrigerate for at least 30 minutes to chill and meld flavors.
- Fill glasses with ice cubes and pour the chilled agua fresca over the ice. Garnish with fresh mint leaves.
