Preparation Steps
  1. In a large bowl, combine the chicken thighs with jerk seasoning and olive oil. Allow to marinate for about 15 minutes.
  2. Preheat your grill to medium-high heat (around 400°F). Slice the pineapple into thick rings and grill for 3-4 minutes on each side until caramelized.
  3. Cook the marinated chicken on the grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  4. In a mixing bowl, combine the coleslaw mix with mayonnaise, apple cider vinegar, honey (if using), salt, and pepper. Toss together until evenly coated.
  5. To assemble, place the grilled chicken on the bottom half of each bun, top with grilled pineapple slices and a portion of coleslaw.
  6. Garnish with chopped cilantro or parsley if desired, place the top half of the bun on each sandwich, and serve.
