Preparation Steps
- In a large bowl, combine the chicken thighs with jerk seasoning and olive oil. Allow to marinate for about 15 minutes.
- Preheat your grill to medium-high heat (around 400°F). Slice the pineapple into thick rings and grill for 3-4 minutes on each side until caramelized.
- Cook the marinated chicken on the grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- In a mixing bowl, combine the coleslaw mix with mayonnaise, apple cider vinegar, honey (if using), salt, and pepper. Toss together until evenly coated.
- To assemble, place the grilled chicken on the bottom half of each bun, top with grilled pineapple slices and a portion of coleslaw.
- Garnish with chopped cilantro or parsley if desired, place the top half of the bun on each sandwich, and serve.
