Step-by-Step Instructions
  1. Season chicken breasts generously with salt, pepper, and Cajun seasoning. Heat olive oil in a skillet over medium-high heat. Sear chicken for 6-7 minutes on each side until cooked through. Remove and rest.
  2. Bring salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
  3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in Cajun seasoning and smoked paprika, cooking for another minute.
  4. Pour in heavy cream and chicken broth, stirring well. Bring to a gentle simmer, cooking for 4-5 minutes until the sauce thickens.
  5. Gradually stir in grated Parmesan cheese until melted. Adjust seasoning with salt and pepper as needed. Add reserved pasta water for desired consistency.
  6. Combine drained pasta with the sauce, then add sliced chicken. Toss to coat. Optionally, sprinkle extra cheese over the top.
  7. Transfer pasta to serving bowls and garnish with freshly chopped parsley. Serve immediately with a salad and garlic bread.
