- Season chicken breasts generously with salt, pepper, and Cajun seasoning. Heat olive oil in a skillet over medium-high heat. Sear chicken for 6-7 minutes on each side until cooked through. Remove and rest.
- Bring salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in Cajun seasoning and smoked paprika, cooking for another minute.
- Pour in heavy cream and chicken broth, stirring well. Bring to a gentle simmer, cooking for 4-5 minutes until the sauce thickens.
- Gradually stir in grated Parmesan cheese until melted. Adjust seasoning with salt and pepper as needed. Add reserved pasta water for desired consistency.
- Combine drained pasta with the sauce, then add sliced chicken. Toss to coat. Optionally, sprinkle extra cheese over the top.
- Transfer pasta to serving bowls and garnish with freshly chopped parsley. Serve immediately with a salad and garlic bread.
