Ingredients
  

For the Dough
  • 1 batch Danish pastry dough Store-bought puff pastry can be used.
For the Cream Cheese Filling
  • 8 oz Full-fat cream cheese At room temperature.
  • 1/4 cup Granulated sugar Adjust or substitute if desired.
  • 1/4 cup Milk Any type of milk works.
  • 1 tsp Lemon zest Can use orange zest or omit.
For the Strawberry Filling
  • 1/2 cup Strawberry jam Substitute with raspberry or apricot jam.
  • 1 cup Fresh strawberries Chopped into small pieces.
For the Topping
  • 1 each Egg yolk For washing; omit for vegan options.
  • 2 tbsp Demerara sugar Regular granulated sugar can be used.

Method
 

Dough Preparation
  1. Prepare the Danish pastry dough a day in advance.
  2. Combine flour, butter, and salt, then knead with cold water.
  3. Wrap and refrigerate for at least 10 hours.
Baking
  1. Preheat your oven to 200°C (395°F) or 180°C for fan-assisted ovens.
  2. Line two baking trays with parchment paper.
  3. Roll chilled dough into a rectangle, trim edges.
  4. Cut into squares, folding corners to form pockets.
  5. Let shaped pastries rest for 10 to 15 minutes.
  6. Mix cream cheese, sugar, milk, and zest until smooth; add chopped strawberries.
  7. Fill pastry squares with jam and cream cheese mixture.
  8. Brush edges with egg wash; sprinkle demerara sugar on top.
  9. Bake for 18 to 22 minutes or until golden brown.
  10. Cool slightly on a wire rack before serving.

Notes
