Dough Preparation
- Prepare the Danish pastry dough a day in advance.
- Combine flour, butter, and salt, then knead with cold water.
- Wrap and refrigerate for at least 10 hours.
Baking
- Preheat your oven to 200°C (395°F) or 180°C for fan-assisted ovens.
- Line two baking trays with parchment paper.
- Roll chilled dough into a rectangle, trim edges.
- Cut into squares, folding corners to form pockets.
- Let shaped pastries rest for 10 to 15 minutes.
- Mix cream cheese, sugar, milk, and zest until smooth; add chopped strawberries.
- Fill pastry squares with jam and cream cheese mixture.
- Brush edges with egg wash; sprinkle demerara sugar on top.
- Bake for 18 to 22 minutes or until golden brown.
- Cool slightly on a wire rack before serving.
