Preparation
- In a mixing bowl, combine all-purpose flour, baking powder, sugar, and salt, mixing well. Cut in shortening or butter until the mixture resembles coarse crumbs. Gradually add warm water, stirring until a soft dough forms. Let the dough rest for about 20 minutes.
- On a floured surface, lightly knead the rested dough for about 1-2 minutes until it becomes smooth and elastic.
- Using a rolling pin, roll out the dough to approximately ¼ inch thick. Cut the dough into squares or diamonds, aiming for pieces that are about 3 inches wide.
- In a deep skillet or heavy pot, heat oil to 375°F (190°C). Use a thermometer to monitor the temperature.
- Carefully drop a few dough pieces into the hot oil and fry each piece until it’s golden brown and puffed, about 2-3 minutes per side.
- Once golden, remove the sopapillas from the oil and transfer them to a plate lined with paper towels. Dust with powdered sugar or drizzle with honey.
