Step-by-Step Instructions
  1. Begin by cutting boneless, skinless chicken breasts into bite-sized pieces. Season with salt and pepper.
  2. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the seasoned chicken pieces and cook for 5 to 7 minutes until golden brown.
  3. In the same skillet, reduce the heat to medium and sauté minced garlic for about 30 seconds. Stir in soy sauce, peanut butter, and coconut milk, whisking until smooth.
  4. Return the cooked chicken to the skillet, stirring to coat it in the peanut sauce. Allow to cook together for 2 to 3 minutes.
  5. Serve the dish over steamed jasmine rice or noodles, garnished with chopped peanuts and fresh cilantro.
