- Combine 2 pounds of chicken wings with 1 egg, 2 tablespoons of oyster sauce, 2 tablespoons of soy sauce, 1 teaspoon of garlic powder, and 1 teaspoon of white pepper in a mixing bowl. Mix well, cover, and marinate in the refrigerator for at least 30 minutes.
- In a separate bowl, whisk together ½ cup of all-purpose flour, ½ cup of cornstarch, and 1 teaspoon of baking powder for the coating.
- Heat oil in a deep pot to 350°F. Fry the marinated wings in batches for 3-4 minutes until golden brown. Transfer to a wire rack.
- Let the wings rest on the wire rack for about 10 minutes to let moisture escape.
