  • 1 large Egg acts as a binding agent
  • 2 tablespoons Oyster Sauce substitute with soy sauce for vegetarian
  • 2 tablespoons Soy Sauce use low-sodium if monitoring salt
  • 1 teaspoon Garlic Powder fresh garlic can be used
  • 1 teaspoon White Pepper black pepper can be used
  • Oil Neutral oil like canola or vegetable
For Coating
  • ½ cup All-Purpose Flour try gluten-free flour if needed
  • ½ cup Cornstarch substitute with potato starch if desired
  • 1 teaspoon Baking Powder ensure it's fresh for best results

Method
 

Step-by-Step Instructions
  1. Combine 2 pounds of chicken wings with 1 egg, 2 tablespoons of oyster sauce, 2 tablespoons of soy sauce, 1 teaspoon of garlic powder, and 1 teaspoon of white pepper in a mixing bowl. Mix well, cover, and marinate in the refrigerator for at least 30 minutes.
  2. In a separate bowl, whisk together ½ cup of all-purpose flour, ½ cup of cornstarch, and 1 teaspoon of baking powder for the coating.
  3. Heat oil in a deep pot to 350°F. Fry the marinated wings in batches for 3-4 minutes until golden brown. Transfer to a wire rack.
  4. Let the wings rest on the wire rack for about 10 minutes to let moisture escape.
  5. Heat the oil to 400°F and fry the wings again in small batches for 2-3 minutes for extra crispiness.
  6. Transfer the fried wings to a serving platter and serve with your favorite dipping sauces.
