  • 1 cup long-grain white rice can substitute with brown rice
For the Sauce
  • 1 can (14 oz) diced tomatoes canned, with juices
  • 2 cups chicken stock or vegetable stock for vegetarian
  • 1 cube Knorr chicken bouillon or low-sodium broth
  • 1 packet Italian dressing & seasoning mix or homemade with dried herbs
For Creaminess
  • 1 cup Parmesan cheese grated
  • 4 tablespoons salted butter or unsalted
For Flavor Kick
  • 1 teaspoon paprika smoked paprika for extra flavor

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 baking dish with butter, add uncooked rice, tomatoes, and chicken stock, then stir.
  2. Sprinkle Knorr chicken bouillon and half of the Italian seasoning over the rice, toss gently with a fork.
  3. Melt butter and pour it over the rice, then top with grated Parmesan cheese without mixing.
  4. Place chicken thighs skin-side up on the cheese layer, season with remaining Italian seasoning and paprika.
  5. Cover with foil and bake for 1 hour. Then increase the temperature to 375°F (190°C), remove foil, and bake for an additional 20-25 minutes.
