For Serving
  • 4 cups Cooked Rice white or brown rice works well
  • 1 bunch Fresh Cilantro can be replaced with green onions
  • 1 cup Kimchi or any pickled veggie as an alternative

Method
 

Step-by-Step Instructions for Korean Style Pot Roast
  1. Preheat your oven to 325°F (163°C).
  2. Generously season the beef chuck roast with kosher salt. In a large pot, heat 2 tablespoons of vegetable oil over medium-high heat. Add the roast and sear for 4-5 minutes per side until golden-brown.
  3. Remove the roast and sauté the chopped sweet onion, minced garlic, and grated fresh ginger in the same pot for 3-4 minutes until the onions are translucent.
  4. Stir in 2 tablespoons of gochujang, 1 tablespoon of brown sugar, 2 tablespoons of soy sauce, and 2 cups of beef broth. Allow it to simmer for 2 minutes.
  5. Return the seared beef chuck roast to the pot, cover, and cook in the preheated oven for 3-4 hours until fork-tender.
  6. Let the roast rest for at least 15 minutes before serving. Serve over cooked rice, garnished with fresh cilantro and accompanied by kimchi.
