Toppings
  • 1 cup fresh berries Use favorite berries like blueberries or strawberries.
  • ½ cup granola Offers satisfying crunch.
  • ¼ cup nuts Chopped or slivered for healthy fats and protein.

Equipment

  • medium-sized bowl
  • whisk
  • plastic wrap

Method

Base Preparation
  1. In a medium-sized bowl, combine ½ cup of chia seeds with 2 cups of almond or coconut milk. Whisk vigorously until fully incorporated and smooth, ensuring no lumps. Mix for about 1-2 minutes.
  2. Stir in ¼ cup of maple syrup or honey, zest from one lemon, and ¼ cup of fresh lemon juice. If using, add 1 tsp of vanilla extract. Mix well.
  3. Cover the bowl with plastic wrap and place in the refrigerator for at least 2 hours, or overnight. This allows chia seeds to absorb liquid, thickening the mixture.
  4. After chilling, stir the pudding to break up any clumps. If too thick, add a splash of almond or coconut milk.
  5. Scoop pudding into serving bowls and garnish with fresh berries, lemon zest, or Greek yogurt/coconut cream. Enjoy chilled.
