Base Preparation
- In a medium-sized bowl, combine ½ cup of chia seeds with 2 cups of almond or coconut milk. Whisk vigorously until fully incorporated and smooth, ensuring no lumps. Mix for about 1-2 minutes.
- Stir in ¼ cup of maple syrup or honey, zest from one lemon, and ¼ cup of fresh lemon juice. If using, add 1 tsp of vanilla extract. Mix well.
- Cover the bowl with plastic wrap and place in the refrigerator for at least 2 hours, or overnight. This allows chia seeds to absorb liquid, thickening the mixture.
- After chilling, stir the pudding to break up any clumps. If too thick, add a splash of almond or coconut milk.
- Scoop pudding into serving bowls and garnish with fresh berries, lemon zest, or Greek yogurt/coconut cream. Enjoy chilled.
