Step-by-Step Instructions for Lemon Thyme Chicken Roulade
  1. In a mixing bowl, combine cream cheese, fresh lemon zest, and chopped thyme, then season with salt and pepper to taste.
  2. Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness of about 1/2 inch. Spread the herbaceous cream cheese filling over each breast and roll into a tight cylinder.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat, add the chicken roulade, and sear until golden brown, about 3-4 minutes per side. Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 20-25 minutes.
  4. In the same skillet, melt butter, add thyme and lemon juice, stir in chicken broth, and simmer until slightly thickened.
  5. Slice the roulade into medallions and arrange on a plate, drizzled with the lemon thyme sauce and served with sautéed seasonal vegetables.
