- Preheat your oven to the temperature indicated on the frozen French fries package, typically around 425°F (220°C).
- In a large mixing bowl, toss the frozen fries with a drizzle of olive oil, smoked paprika, chili powder, garlic powder, onion powder, cumin, salt, and pepper until evenly coated.
- Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for approximately 25 to 30 minutes until golden brown and crispy.
- Remove fries from the oven and immediately sprinkle shredded cheddar and Monterey Jack cheese over them. Return to the oven for an additional 3 to 5 minutes until melted.
- While the cheese melts, chop your desired toppings, including ground beef, jalapeños, black beans, corn, and tomatoes.
- Transfer the cheese-loaded fries to a serving platter, layering on the toppings.
- Drizzle sour cream and guacamole over the top and garnish with cilantro and green onions.
- Serve immediately with lime wedges.
