For the Lasagna
  • 9 sheets lasagna noodles no-boil noodles recommended
  • 2 tablespoons olive oil or any neutral oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cups bell peppers chopped, any variety
  • 1 medium zucchini sliced
  • 2 cups mushrooms sliced, any variety
  • 4 cups spinach fresh
For the Cheese Mixture
  • 15 ounces ricotta cheese
  • 1 large egg
  • 2 cups mozzarella cheese shredded
  • 1 cup parmesan cheese grated
For the White Sauce
  • 2 cups white sauce or store-bought béchamel
For Seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and prepare a large baking dish.
  2. Boil salted water in a large pot and cook the no-boil lasagna noodles according to the package for about 8-10 minutes. Drain and lay flat.
  3. Heat olive oil in a skillet and sauté chopped onion and minced garlic for 3-4 minutes until translucent. Add bell peppers, zucchini, and mushrooms for 5-7 minutes.
  4. Stir in fresh spinach until wilted, season with salt, pepper, basil, and oregano, then remove from heat.
  5. Combine ricotta cheese and beaten egg in a bowl until smooth.
  6. Layer in the baking dish starting with white sauce, then noodles, half of the ricotta mixture, half of the veggies, and top with mozzarella and parmesan.
  7. Repeat layers and finish with noodles, white sauce, and remaining cheeses on top.
  8. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15 minutes.
  9. Let the lasagna rest for 10 minutes before slicing to maintain layers.
