Ingredients
  

For the Shrimp
  • 1 lb Shrimp Medium to large size. Substitute with scallops or firm white fish.
For the Salsa
  • 2 Limes Zest from one and juice from both.
  • 1 Mango Large, ripe but firm, diced.
  • 1/4 cup Red Onion Finely diced. Soak in cold water for 10 minutes if desired.
  • 1/4 cup Fresh Cilantro Chopped. Optional for those who dislike its taste.
  • Salt and Black Pepper To taste.
For the Toppings
  • 2 cups Purple Cabbage Slaw Can be substituted with shredded lettuce.
  • 1/2 cup Sriracha Mayo Mix mayo with sriracha (1-2 tsp) to taste.
For the Tortillas
  • 8-10 Corn Tortillas Can substitute with flour tortillas.

Cooking Instructions
  1. Pat shrimp dry with paper towels, mix with chili powder, lime zest, salt, and black pepper. Marinate for about 10 minutes.
  2. Heat a skillet over medium-high heat, add oil, and cook marinated shrimp for 2-3 minutes on each side until pink and opaque.
  3. Combine diced mango, red onion, cilantro, and lime juice in a bowl. Season with salt and pepper, then mix thoroughly.
  4. Heat tortillas one at a time in a dry skillet for 30 seconds on each side, or in a microwave for 30-40 seconds.
  5. Assemble the tacos by placing cooked shrimp on a warm tortilla, adding mango salsa, cabbage slaw, and drizzle with sriracha mayo.
