  • 1 cup Vegetable Broth Water or chickpea cooking liquid can be used.
  • 1/2 can Coconut Milk Almond milk or cashew cream can be substituted.
For the Main Dish
  • 2 cans Canned Chickpeas Drained and rinsed.
  • 1 cup Spinach or Basil Torn; can substitute with kale or arugula.

Step-by-Step Instructions for Marry Me Chickpeas
  1. In a large pan over medium heat, drizzle the olive oil and add the chopped onion and minced garlic. Sauté for about 5 minutes until the onion is translucent.
  2. Stir in chopped sun-dried tomatoes, tomato paste, Italian seasoning, red chili flakes, and a pinch of salt. Sauté for approximately 3 minutes.
  3. Pour in the vegetable broth and coconut milk, stirring well. Increase heat slightly and bring to a gentle simmer for 2-3 minutes.
  4. Add in the drained chickpeas, gently folding them into the sauce. Cover and let simmer for an additional 2-3 minutes.
  5. Remove the lid and stir in the torn spinach or basil. Cook just until the greens are wilted, about 1 minute.
