Step-by-Step Instructions for Lemon Beignets
  1. In a small bowl, combine warm water with granulated sugar and active dry yeast. Stir gently and let sit for 10 minutes until foamy.
  2. In a bowl of a stand mixer, whisk together eggs, vanilla extract, and evaporated milk until smooth.
  3. Add the activated yeast mixture to the bowl with eggs and milk. Gradually sprinkle in the bread flour and unsalted butter, mixing until combined.
  4. Continue mixing the dough, adding salt and remaining flour until smooth and elastic, about 5-7 minutes. Cover and refrigerate for 2 hours.
  5. Heat peanut oil to 360°F. Roll out dough and cut into squares. Fry in hot oil for about 1 minute on each side until golden.
  6. Remove beignets to paper towels. Fill with lemon curd using a piping bag, dust with confectioners’ sugar, top with berries, and serve.
