  • 1.5 cups All-Purpose Flour or gluten-free flour blend
  • 0.75 cups Granulated Sugar can replace with coconut sugar
  • 2 tsp Baking Powder ensure freshness
  • 0.5 tsp Baking Soda
  • 0.5 tsp Salt
  • 1 tsp Ground Cinnamon or nutmeg or pumpkin pie spice
  • 0.5 tsp Ground Ginger
  • 0.25 tsp Ground Nutmeg
  • 0.5 tsp Ground Cardamom or allspice
  • 1 Large Egg
  • 0.75 cups Buttermilk or almond milk with vinegar
  • 0.33 cups Vegetable Oil or melted coconut oil
  • 1 tsp Vanilla Extract use pure vanilla for best results
For the Glaze
  • 1 cup Powdered Sugar or alternative sweetener
  • 1-2 tbsp Milk any milk or alternative
  • 0.5 Vanilla Bean or more vanilla extract

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and prep the mini muffin pan by greasing or lining with paper liners.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cardamom.
  3. In a separate bowl, combine the wet ingredients: egg, buttermilk, vegetable oil, and vanilla extract, whisking until frothy.
  4. Pour the wet ingredients into the dry ingredients and gently fold them together until just combined.
  5. Spoon the batter into the mini muffin pan, filling each cup about ⅔ full.
  6. Bake in the preheated oven for 12-15 minutes or until a toothpick inserted comes out clean.
  7. Meanwhile, prepare the vanilla bean glaze by whisking together powdered sugar, milk, and vanilla bean seeds until smooth.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack. Drizzle the glaze over the cooled muffins.
