For the Filling
  • 1 cup Arugula Can substitute with spinach or mixed greens
  • 8 ounces Fresh Mozzarella Cheese Low-fat mozzarella can be used
  • 2 large Tomatoes Sliced, heirloom tomatoes are a great twist
  • cup Roasted Cherry Tomatoes Optional
  • to taste Pickled Red Onions Optional
  • 1 cup Fresh Basil Leaves Can use Italian seasoning if fresh is unavailable
  • to taste Flaky Sea Salt
  • to taste Freshly Ground Black Pepper
For the Drizzle
  • to drizzle Extra-Virgin Olive Oil Avocado oil can be used as a substitute

Method
 

Preparation Steps
  1. Begin by slicing the focaccia pieces in half horizontally. Place the bottom halves on a clean serving plate.
  2. Take your arugula and generously pile it on top of the focaccia.
  3. Next, slice the fresh mozzarella cheese into thick rounds and place these slices over the arugula.
  4. Add the large tomato slices on top of the mozzarella, overlapping slightly.
  5. If desired, sprinkle the roasted cherry tomatoes and pickled red onions over the tomato layer.
  6. Now, scatter fresh basil leaves over the top of your layered creation. Drizzle with extra-virgin olive oil.
  7. Sprinkle flaky sea salt and freshly ground black pepper to taste, then place the top half of the focaccia on the sandwich.
  8. Slice the completed Caprese Sandwich in half for easier handling and serve it right away.
