  • 1/4 cup Honey or Maple Syrup Reduce for a lower sugar option.
  • 1 teaspoon Vanilla Extract Can be omitted if unavailable.

Method
 

Baking Instructions
  1. Preheat your oven to 325°F (160°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine rolled oats, chopped mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and salt.
  4. In a small saucepan, melt the natural peanut butter along with honey or maple syrup until smooth and creamy.
  5. Remove from heat, stir in vanilla extract, and pour the mixture over the dry ingredients, mixing thoroughly.
  6. Using a cookie scoop or spoon, portion the mixture onto the baking sheet, leaving space between each cookie.
  7. Bake for 12-15 minutes until golden brown and firm to touch.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
