  • 2 medium Carrots
  • 2 cloves Garlic minced
  • 1 cup Frozen peas
For the Seasoning and Rice
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 2 cups Parboiled white long grain rice
  • 1 teaspoon Oregano
For the Cooking Liquid
  • 4 cups Chicken broth

Step-By-Step Instructions
  1. Prepare the spice rub by mixing cumin, paprika, garlic powder, and salt in a bowl. Set aside half for the chicken.
  2. Coat the chicken thighs evenly with the prepared spice rub, then set aside.
  3. Heat olive oil in a large pan over medium-high heat, sear the chicken thighs for 3-4 minutes on each side until golden brown. Remove and set aside.
  4. In the same pan, sauté diced onion and carrots for about 5 minutes until softened.
  5. Stir in rice, minced garlic, and the remaining spice rub, cooking for 1-2 minutes.
  6. Pour in chicken broth and add oregano, bring to a boil.
  7. Return the seared chicken to the pan, reduce heat, cover, and simmer for 15 minutes.
  8. Add frozen peas, cover, and cook for an additional 5 minutes until liquid is absorbed and rice is tender.
