Step-by-Step Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season 2 chicken breasts with salt and pepper. Cook chicken for about 4 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add 2 cups of chicken broth, 1 can of diced tomatoes, and 1 teaspoon of garlic powder, stirring together. Bring to a low boil. Scrape the brown bits for flavor.
- Once bubbling, stir in 1 cup of orzo pasta, and nestle the chicken back into the skillet. Cover and simmer for 12-16 minutes until orzo is tender.
- Once the orzo is cooked, tear 8 ounces of fresh mozzarella and scatter over the dish. Cover for about 2 minutes to allow it to melt.
- Remove from heat and sprinkle with torn basil leaves. Stir gently if desired. Serve and enjoy!

Notes
For best results, use fresh ingredients and avoid overcooking the basil to maintain its flavor and color.
