Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season 2 chicken breasts with salt and pepper. Cook chicken for about 4 minutes on each side until golden brown. Remove and set aside.
  2. In the same skillet, add 2 cups of chicken broth, 1 can of diced tomatoes, and 1 teaspoon of garlic powder, stirring together. Bring to a low boil. Scrape the brown bits for flavor.
  3. Once bubbling, stir in 1 cup of orzo pasta, and nestle the chicken back into the skillet. Cover and simmer for 12-16 minutes until orzo is tender.
  4. Once the orzo is cooked, tear 8 ounces of fresh mozzarella and scatter over the dish. Cover for about 2 minutes to allow it to melt.
  5. Remove from heat and sprinkle with torn basil leaves. Stir gently if desired. Serve and enjoy!
