  1. In a large mixing bowl, combine rolled oats, pumpkin puree, nut butter, honey or maple syrup, pumpkin spice mix, and chia seeds. Stir until well incorporated.
  2. Check the mixture’s consistency; if too dry, add a tablespoon of water or more pumpkin puree. If too wet, gradually stir in more rolled oats.
  3. Shape the mixture into bite-sized balls, roughly 1 inch in diameter. This should yield about 12-15 bites.
  4. Lay them out on a parchment-lined baking sheet and chill in the refrigerator for at least 2 hours.
  5. Transfer the chilled bites to an airtight container for storage; they can be kept in the refrigerator for up to a week or frozen for up to three months.
