Cooking Instructions
  1. Finely chop 1 cup of broccoli and shred 1 cup of carrots. Set aside.
  2. In a medium pot, heat 2 tablespoons of olive oil over medium heat. Add broccoli, carrots, and garlic. Sauté for about 5 minutes until fragrant.
  3. Add 1 cup of orzo and 2 cups of chicken broth to the pot, stirring. Bring to a gentle boil, then reduce heat and simmer for 10-15 minutes.
  4. Remove from heat and stir in 1 ounce of cream cheese and 1/2 cup of grated Parmesan until melted and creamy.
  5. Serve warm and enjoy, optionally pairing with grilled chicken or fish.
