  • 1 cup green lentils or substitute with brown lentils
  • 1 cup long grain rice instant rice can be used, may alter texture
For the Aromatics
  • 1 medium onion use yellow or sweet onions
For the Seasoning
  • 1 teaspoon cumin adjust to taste

Optional Garnishes
  • 1/4 cup fresh herbs (parsley or cilantro) stir in before serving
  • 1 tablespoon lemon juice squeeze just before serving

Method
 

Step‑by‑Step Instructions
  1. Rinse 1 cup of green lentils and 1 cup of long grain rice under cold water in a fine mesh strainer. Allow both to drain well.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and sauté until golden brown and fragrant.
  3. Add the rinsed lentils and rice to the pot along with 1 teaspoon of cumin, salt, and black pepper. Stir together.
  4. Pour in 4 cups of water or vegetable broth to the pot and bring to a vigorous boil.
  5. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 15-20 minutes.
  6. After cooking, turn off the heat and let the pot sit, covered, for an additional 5 minutes.
  7. Serve by scooping the Mujadara onto plates or bowls and garnish with herbs and lemon juice.
