Ingredients
  

Strawberry Syrup
  • 2 cups Fresh strawberries Ensure they are ripe
  • 1 cup Filtered water
  • 1 cup Granulated sugar or honey/agave for a natural alternative
Cold Foam
  • 1 cup Heavy whipping cream or coconut cream for dairy-free option
  • 1/2 cup Half & Half or extra heavy cream/non-dairy creamer
  • 2 tablespoons Pure maple syrup or agave/honey as alternatives
  • 1/4 cup Reserved strawberries from syrup
Latte
  • 2 tablespoons Ceremonial grade matcha powder or latte grade for milder taste
  • 1 cup Hot water about 80º Celsius (180ºF)
  • 1 cup Ice for serving
  • 1 cup Non-Dairy Milk almond, oat, or soy milk

Method
 

Strawberry Syrup
  1. In a medium pot, combine fresh strawberries, filtered water, and granulated sugar. Over low heat, stir until the sugar dissolves, then bring to a low boil for 1 minute. Reduce heat and let simmer for 20 minutes, mashing strawberries. Cool and strain through a sieve.
Strawberry Cold Foam
  1. In a tall glass, combine heavy whipping cream, vanilla extract, and maple syrup. Whisk vigorously until it thickens and holds soft peaks.
Prepare Matcha Latte
  1. Whisk ceremonial grade matcha powder with hot water until smooth and vibrant green.
Assemble Latte
  1. Fill a tall glass with ice, pour in the strawberry syrup, then the matcha, and top with non-dairy milk and cold foam.
Final Touches
  1. Garnish with fresh strawberry slices or matcha powder for added appeal.
