  • 1 cup Green Bell Pepper Diced
  • 1 cup Red Bell Pepper Diced
  • 1 small Red Onion Finely chopped
  • 1/2 cup Black Olives Sliced (optional)
For the Dressing
  • 1/2 cup Italian Dressing Store-bought or homemade
For the Optional Topping
  • 1/4 cup Grated Parmesan Cheese Omit for vegan version

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Cook spaghetti for 8-10 minutes until al dente, then drain.
  2. Rinse the spaghetti under cold water to stop cooking and drain excess water.
  3. Prepare vegetables: halve cherry tomatoes, dice cucumber and bell peppers, and finely chop red onion.
  4. In a mixing bowl, combine cooled spaghetti with prepared vegetables.
  5. Pour Italian dressing over the salad and toss until thoroughly mixed.
  6. Season with salt and pepper. Add grated Parmesan cheese if desired.
  7. Cover and refrigerate for at least 1 hour before serving.
