- Preheat your oven to 400°F (200°C). Rinse and dry your fresh green beans, then trim the ends. Peel larger carrots and slice into 1-inch pieces.
- In a small bowl, combine olive oil, garlic powder, coarse salt, black pepper, and fresh dill. Stir thoroughly.
- Pour the seasoning mixture over the trimmed green beans and sliced carrots in a large mixing bowl. Toss together gently.
- Line a baking sheet with parchment paper. Spread the seasoned vegetables in a single layer on the baking sheet.
- Place the baking sheet in the preheated oven and roast the vegetables for 20 to 25 minutes, tossing halfway through.
- Remove from the oven, let cool for a minute, and garnish with additional fresh dill if desired. Serve warm.
