  • 2 cloves Garlic minced
  • 2 tablespoons Extra Virgin Olive Oil high-quality recommended
  • 2 tablespoons Balsamic Vinegar red wine vinegar can be an alternative
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil or fresh herbs if available
  • 1 teaspoon Red Pepper Flakes optional
  • 8 oz Fresh Mozzarella can substitute with burrata or feta
  • 1 cup Fresh Basil Leaves or arugula for a peppery kick

  • 2 tablespoons Balsamic Glaze optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Position the oven rack in the center.
  2. Wash and halve the Roma tomatoes. Mince the garlic finely.
  3. In a large mixing bowl, combine the halved tomatoes with the minced garlic. Drizzle over the olive oil and balsamic vinegar, and sprinkle in dried oregano, basil, and red pepper flakes. Season with salt and pepper and stir well.
  4. Toss the tomatoes until well coated and spread them cut-side up on a parchment-lined baking sheet.
  5. Roast the tomatoes for 45-60 minutes until golden brown and caramelized.
  6. Let the roasted tomatoes cool slightly on the baking sheet.
  7. Layer your roasted tomatoes with slices of fresh mozzarella and add fresh basil leaves.
  8. Drizzle with olive oil and optional balsamic glaze, then season lightly with salt and pepper. Serve immediately.
