Cooking Steps
- In a large oven-safe skillet, heat a splash of oil over medium heat. Add 1 pound of lean ground beef along with 1 diced onion. Sauté for about 8-10 minutes until browned and onions are translucent.
- Sprinkle in 2 tablespoons of taco seasoning and pour in 1 cup of prepared salsa. Stir to coat evenly, then add 1 can of drained black beans, 1 can of undrained sweet corn, and 1 can of undrained diced tomatoes and green chiles. Simmer for 5-6 minutes.
- Stir in 2 cups of ready rice and mix well. Top with 1 ½ cups of shredded Colby Jack cheese.
- Preheat the broiler on high. Place the skillet under the broiler for about 1 minute until cheese is bubbly and golden brown.
- Remove from oven and let cool slightly. Garnish with fresh cilantro, diced avocado, sour cream, and tortilla chips before serving.
