Ingredients
  

For the Skillet
  • 1 pound lean ground beef or ground turkey/chicken
  • 1 medium onion diced; or shallots/leeks
  • 2 tablespoons taco seasoning or homemade spices
  • 1 cup prepared salsa mild salsa optional
  • 1 can black beans drained
  • 1 can sweet corn undrained; or frozen corn
  • 1 can diced tomatoes and green chiles undrained; plain diced tomatoes for less heat
  • 2 cups ready rice or long-grain rice/cauliflower rice
  • 1.5 cups shredded Colby Jack cheese fresh shredded for best melt
For Serving
  • 0.25 cup cilantro optional, fresh
  • 1 medium avocado diced or sliced
  • 0.5 cup sour cream or Greek yogurt
  • 1 bag tortilla chips for scooping

Method
 

Cooking Steps
  1. In a large oven-safe skillet, heat a splash of oil over medium heat. Add 1 pound of lean ground beef along with 1 diced onion. Sauté for about 8-10 minutes until browned and onions are translucent.
  2. Sprinkle in 2 tablespoons of taco seasoning and pour in 1 cup of prepared salsa. Stir to coat evenly, then add 1 can of drained black beans, 1 can of undrained sweet corn, and 1 can of undrained diced tomatoes and green chiles. Simmer for 5-6 minutes.
  3. Stir in 2 cups of ready rice and mix well. Top with 1 ½ cups of shredded Colby Jack cheese.
  4. Preheat the broiler on high. Place the skillet under the broiler for about 1 minute until cheese is bubbly and golden brown.
  5. Remove from oven and let cool slightly. Garnish with fresh cilantro, diced avocado, sour cream, and tortilla chips before serving.

Notes

For the best results, shred cheese from the block and consider adding sautéed bell peppers for extra flavor.
