  1. In a medium bowl, combine brown sugar, garlic powder, onion powder, thyme, salt, pepper, and optional cayenne. Mix until well blended.
  2. Preheat your oven to 300°F if using; remove the silverskin from the ribs and coat them with the rub. Wrap tightly and refrigerate overnight.
  3. Decide your cooking method: grilling (preheat to 300°F), oven roasting, or slow cooking (cut ribs to fit).
  4. For grilling, place ribs on the cool side of the grill, close the lid and cook for about 3 hours.
  5. For oven roasting, place ribs on a baking sheet lined with foil, roast for about 3 hours, glaze in the final minutes.
  6. For slow cooking, place cut ribs in the cooker, cover on HIGH for 3-5 hours, then glaze and heat for 30 minutes.
