Step‑by‑Step Instructions
  1. Prepare ingredients by slicing chicken breast into 1-inch strips and slicing bell peppers into thin strips. Mince the garlic.
  2. Layer half of the salsa in the bottom of the crockpot as a flavor base.
  3. Add half of the sliced bell peppers and onion on top of the salsa, then sprinkle minced garlic.
  4. Place the seasoned chicken strips on the vegetables, sprinkle with fajita seasoning and chili powder.
  5. Top with remaining salsa, sliced peppers, and onions. Squeeze lime juice over everything.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken reaches 165°F.
  7. Shred the chicken directly in the crockpot and mix with the vegetables.
  8. Serve in warm tortillas and customize with favorite toppings.
