- In a bowl, combine the chicken thighs, egg, soy sauce, and spices; marinate for 30 minutes.
- Whisk together the Sambal Oelek, soy sauce, oyster sauce, ketchup, honey, and vinegar until smooth.
- In a resealable bag, combine flour, cornstarch, and additional chili powder. Coat the marinated chicken.
- Heat oil in a skillet and fry the breaded chicken for about 4 minutes on each side until golden brown.
- Toast the cashews in a dry skillet until golden brown, approximately 3-4 minutes.
- Stir-fry red bell pepper and sweet onion for 2 minutes, then add garlic and ginger for another 30 seconds.
- Pour the sauce over the vegetables and simmer, then add chicken and cashews, tossing to coat.
