  • 1 pound chicken thighs sliced into 1/2-inch strips
  • 1 large egg acts as a binder
  • 1 teaspoon salt
  • 1 teaspoon pepper
For the Breading
  • 1 cup flour can use rice flour for gluten-free
  • 1/4 cup cornstarch enhances crispiness
  • 1 teaspoon garlic powder adjust to taste
  • 1 teaspoon onion powder adjust to taste
  • 1 teaspoon ginger powder adjust to taste
  • 1 teaspoon paprika adjust to taste
  • 1/2 teaspoon cayenne pepper adjust to taste
For the Sauce
  • 1.5 tablespoons Sambal Oelek adjust to taste
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon oyster sauce
  • 2 tablespoons ketchup ensure it doesn't taste like ketchup
  • 1 tablespoon honey adjust to taste
  • 1 tablespoon Chinkiang vinegar or a mix of balsamic and rice vinegar
For the Stir-Fry
  • 1/4 cup oil canola or vegetable for frying
  • 1/2 cup cashews unsalted
  • 1 medium red bell pepper sliced
  • 1 medium sweet onion sliced
  • 2 cloves garlic minced
  • 1 inch ginger minced

Method
 

Step-by-Step Instructions
  1. In a bowl, combine the chicken thighs, egg, soy sauce, and spices; marinate for 30 minutes.
  2. Whisk together the Sambal Oelek, soy sauce, oyster sauce, ketchup, honey, and vinegar until smooth.
  3. In a resealable bag, combine flour, cornstarch, and additional chili powder. Coat the marinated chicken.
  4. Heat oil in a skillet and fry the breaded chicken for about 4 minutes on each side until golden brown.
  5. Toast the cashews in a dry skillet until golden brown, approximately 3-4 minutes.
  6. Stir-fry red bell pepper and sweet onion for 2 minutes, then add garlic and ginger for another 30 seconds.
  7. Pour the sauce over the vegetables and simmer, then add chicken and cashews, tossing to coat.
  8. Garnish with sesame seeds and green onions, and serve over jasmine rice immediately.
