For the Pasta
  • 12 ounces Angel Hair Pasta Light and delicate, perfect for absorbing the creamy sauce.
  • 1 cup Pasta Water Adds starch to bind the sauce to the pasta.
For the Sauce
  • 2 tablespoons Olive Oil Extra virgin adds richness.
  • 1 medium Shallot Finely chopped.
  • 1 medium Onion Diced; yellow onion works well.
  • 3 cloves Garlic Minced.
  • 1 teaspoon Crushed Red Pepper Optional.
  • 1 tablespoon Old Bay Seasoning Enhances seafood flavor.
  • 1 teaspoon Garlic Powder Optional if using fresh garlic.
  • 1 teaspoon Black Pepper Freshly ground is recommended.
  • to taste Salt Season according to taste.
  • 1 cup White Wine Choose Chardonnay or Sauvignon Blanc.
  • 2 tablespoons Butter Salted or unsalted.
  • 2 tablespoons Fresh Lemon Juice Can swap for lime.
  • ½ cup Parmesan Cheese Grated; pecorino Romano is a good alternative.
For the Seafood
  • 1 pound Mussels Can be replaced with clams or omitted.
  • 1 pound Tiger Shrimp Any variety can be used.
  • 1 cup Cherry Tomatoes Halved.
  • to taste Fresh Parsley Chopped for garnish.

Method
 

Preparation Steps
  1. In a large skillet, heat olive oil over low heat. Add shallot and onion, seasoning lightly with salt. Sauté for about 5 minutes until fragrant and translucent.
  2. Stir in minced garlic and sauté for an additional 1-2 minutes until aromatic and lightly golden.
  3. Add Old Bay seasoning, garlic powder, and freshly cracked black pepper. Stir well and blend for about 30 seconds.
  4. Add halved cherry tomatoes and sauté until softened, roughly 3-4 minutes.
  5. Increase heat to medium, pour in white wine, and let it simmer for 2-3 minutes.
  6. Season shrimp and mussels, add to skillet with butter and parsley. Cover and cook for 3-4 minutes until shrimp are pink and mussels open.
  7. Remove seafood, lower heat to low, and combine al dente pasta with sauce in the skillet.
  8. Stir in Parmesan cheese and lemon juice, then top with seafood, parsley, and a sprinkle of crushed red pepper.
