  • 1 pound lean ground beef Substitute: ground turkey or chicken for a leaner option.
  • 1 medium yellow onion Diced.
  • 1 packet taco seasoning
  • 2 tablespoons hot honey Substitute: regular honey with a dash of chili flakes.
For the Sweet Potatoes
  • 2 sweet potatoes Peeled and diced.
For the Toppings
  • 1 cup cottage cheese Substitute: Greek yogurt or ricotta cheese.
  • 1 avocado Sliced.
Seasoning
  • 2 tablespoons olive oil Used for sautéing.
  • 0.5 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon cinnamon
  • salt and pepper To taste.

Method
 

Cooking Steps
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced yellow onion. Sauté for about 3–4 minutes until the onion becomes translucent.
  2. Add 1 pound of lean ground beef to the skillet with the sautéed onions. Cook for approximately 5–7 minutes until browned.
  3. Stir in a packet of taco seasoning into the beef mixture and cook for an additional 2–3 minutes.
  4. In a pot, bring water to a boil; add 2 peeled and diced sweet potatoes and cook for about 10–15 minutes until tender. Drain well.
  5. Add 2 tablespoons of hot honey, 0.5 teaspoon of paprika, 0.5 teaspoon of garlic powder, and 0.25 teaspoon of cinnamon to the beef mixture. Season with salt and pepper to taste and cook for another 2 minutes.
  6. In serving bowls, layer tender sweet potatoes followed by the savory beef mixture, topped with 1 cup of creamy cottage cheese and sliced avocado.
