Ingredients

For the Base
  • 4 cups shredded hash browns thawed frozen for maximum crispiness
  • 2 tablespoons vegetable oil or olive oil for a healthier option
  • to taste salt
  • to taste black pepper
For the Scramble
  • 6 large eggs or egg whites for a lighter dish
  • 1/4 cup whole milk or almond milk for dairy-free
For the Protein
  • 1 pound breakfast sausage or plant-based sausage for vegetarian
For the Toppings
  • 1 cup shredded cheddar cheese or Monterey Jack or pepper jack cheese
  • 1 cup salsa mild or spicy based on preference
  • 1 medium avocado sliced fresh to avoid browning
  • to taste green onions optional, for garnish
  • to taste cilantro optional, for garnish

Equipment

  • large nonstick skillet
  • mixing bowl

Method

Cooking Instructions
  1. Heat vegetable oil in a large nonstick skillet over medium-high heat. Add thawed hash browns in an even layer. Sprinkle with salt and pepper, cooking undisturbed for 5-7 minutes until crispy. Flip and cook for another 4-5 minutes.
  2. In the same skillet, add 1 tablespoon of oil and crumbled breakfast sausage. Cook over medium heat, breaking apart with a spatula, until browned and cooked through, about 6-8 minutes.
  3. Whisk together eggs, whole milk, salt, and pepper. Pour into the skillet after removing sausage. Cook gently, stirring occasionally, until eggs are softly scrambled, about 3-4 minutes.
  4. Assemble bowls by dividing crispy hash browns among serving bowls. Layer with scrambled eggs, cooked sausage, and top with shredded cheddar cheese, salsa, and diced avocado. Add green onions and cilantro if desired.
  5. Serve immediately, garnished with remaining green onions or cilantro. Enjoy!
