  • 1 cup brown or green lentils rinsed
  • 2 tablespoons olive oil or avocado oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 teaspoon cumin or adjust to taste
  • 1 teaspoon paprika or adjust to taste
  • to taste pinch salt
  • to taste pinch pepper
  • 4 cups vegetable broth or water
For the Toppings
  • 2 cups chopped spinach or kale
  • 2 large eggs optional, or tofu scramble for vegan
  • 1/2 medium avocado sliced
  • 1/4 cup feta cheese optional, use crumbled tofu for vegan

Method
 

Step-by-Step Instructions
  1. In a medium pot, heat the olive oil over medium heat for about 1 minute. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, cumin, paprika, salt, and pepper. Allow to bloom for about 1 minute. Add the rinsed lentils and stir to coat.
  3. Pour in the vegetable broth, increase heat, and bring to a simmer. Cover and cook for 20-25 minutes until lentils are tender but not mushy.
  4. While the lentils cook, heat a sauté pan. Add chopped greens and cook until wilted, about 3-4 minutes. Cook the eggs in a separate pan to desired doneness.
  5. Divide the lentils into bowls. Layer with sautéed greens, cooked eggs, and sliced avocado. Sprinkle with feta cheese if desired.
