For the Marinade
  • 2 tablespoons Olive Oil Avocado oil is a great substitute.
  • 1 teaspoon Dried Oregano Fresh oregano offers a brighter taste.
  • 0.5 teaspoon Garlic Powder Fresh minced garlic can be used.
  • Salt & Black Pepper Adjust to taste.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, mix chicken with olive oil, dried oregano, garlic powder, salt, and black pepper. Let sit for 5 minutes.
  3. Arrange the chicken in a baking dish, surrounding it with halved cherry tomatoes and Kalamata olives.
  4. Bake for 20 to 25 minutes until chicken is 165°F (74°C) and tomatoes are soft.
  5. Sprinkle feta cheese over the top and bake for another 5 minutes.
  6. Let the dish rest for 5 minutes before serving.
