Method
 

Step-by-Step Instructions
  1. Dry brine the turkey overnight with kosher salt.
  2. Prepare Cajun compound butter by mixing ingredients until well combined.
  3. Apply compound butter under the turkey skin and all over the surface.
  4. Stuff turkey cavity with chopped onions, carrots, lemons, and celery.
  5. Set up roasting pan with remaining vegetables and liquid base.
  6. Roast turkey at 400°F for 45 minutes, then reduce to 325°F.
  7. Inject turkey with melted compound butter and cover with cheesecloth.
  8. Baste turkey every 45 minutes after first hour.
  9. Finish roasting until internal temperature reaches 165°F, then rest before slicing.
