Method
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, halve the cherry tomatoes and drizzle with olive oil, minced garlic, and a pinch of salt. Toss until well coated.
- Spread the tomato mixture onto a baking dish or cast iron skillet. Roast for about 25 minutes until blistered and caramelized.
- Remove from oven, cool for a few minutes, then gently tear the burrata cheese and place it on top of the tomatoes.
- Drizzle balsamic glaze over the burrata and tomatoes. Sprinkle freshly chopped basil on top.
- Serve warm or at room temperature with crusty bread.
