Ingredients
  

  • 2 cups Cherry Tomatoes substitute with grape tomatoes or chopped Roma tomatoes if needed
  • 1 ball Burrata Cheese substitutes: fresh mozzarella or whipped ricotta
  • 2 tablespoons Olive Oil can be swapped with avocado oil or melted butter
  • 2 cloves Garlic can use garlic powder (½ tsp per clove) if fresh isn't available
  • ¼ cup Fresh Basil substitutes: parsley or oregano
  • 2 tablespoons Balsamic Glaze mix honey with balsamic vinegar as an alternative
  • 1 loaf Crusty Bread can substitute with pita chips, crackers, or veggie sticks

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, halve the cherry tomatoes and drizzle with olive oil, minced garlic, and a pinch of salt. Toss until well coated.
  3. Spread the tomato mixture onto a baking dish or cast iron skillet. Roast for about 25 minutes until blistered and caramelized.
  4. Remove from oven, cool for a few minutes, then gently tear the burrata cheese and place it on top of the tomatoes.
  5. Drizzle balsamic glaze over the burrata and tomatoes. Sprinkle freshly chopped basil on top.
  6. Serve warm or at room temperature with crusty bread.
