For the Rice Base
  • 2 cups Cooked Rice Can swap for cauliflower rice
For the Corn
  • 1 cup Corn Kernels Fresh, frozen, or canned
For the Sauce
  • 1 cup Plain Greek Yogurt Fage is recommended
  • 2 tbsp Mayonnaise
  • 2 cloves Minced Garlic
  • 1 tbsp Lime Juice Fresh
  • 1 tsp Lime Zest
  • 1/4 cup Cilantro Chopped
For Serving
  • 1/2 medium Red Onion Thinly sliced
  • 2 wedge Lime For juicing over the bowl

Step-by-Step Instructions
  1. Pat the chicken breasts dry, cut into cubes, and toss in a bowl with olive oil, smoked paprika, chili powder, garlic powder, salt, and pepper until evenly coated.
  2. Heat a large skillet over medium-high heat for about 2 minutes. Add the seasoned chicken cubes and cook for 3-4 minutes on each side until golden brown and cooked through.
  3. In the same skillet, add corn kernels and cook for 5-7 minutes until charred and caramelized.
  4. In a mixing bowl, combine Greek yogurt, mayonnaise, lime juice, lime zest, minced garlic, cilantro, salt, and pepper. Whisk until smooth.
  5. Assemble the bowls with a base of cooked rice, topped with chicken, charred corn, red onion, and drizzle with cilantro-lime sauce.
  6. Garnish with cilantro and lime wedges before serving.
