  • 1/3 cup roasted cashew halves

Method
 

Step-by-Step Instructions
  1. Start by marinating your chicken with sesame oil, soy sauce, and ginger for about 30 minutes. Preheat your grill or stovetop grill pan to medium-high heat.
  2. Grill each side for 6-7 minutes, or until the internal temperature reaches 165°F.
  3. Whisk together the ingredients for the Sesame Ginger Dressing in a bowl.
  4. Combine sesame oil, rice vinegar, soy sauce, grated ginger, honey, and a pinch of salt.
  5. In a large mixing bowl, combine the shredded green cabbage, red cabbage, diced green onion, cilantro, shredded carrots, thinly julienned red bell pepper, and diced jalapeno.
  6. Pour the prepared Sesame Ginger Dressing over the salad mixture. Gently toss everything together until well coated.
  7. Transfer the mixed salad to a serving platter and top with crunchy toppings.
  8. Garnish with additional cilantro, green onion, and optional jalapeno slices.
