Step‑by‑Step Instructions
  1. In a large skillet, scramble eggs over medium heat for about 5 minutes until fluffy and just set. Mix in cooked sausage, shredded cheese, and hash browns.
  2. Preheat oven to 350°F (175°C). Spoon about 1/3 cup of filling onto each tortilla, rolling them tightly and placing seam-side down in a greased baking dish.
  3. In a saucepan, brown sausage for about 5 minutes. Sprinkle flour and stir to create a roux. Gradually whisk in milk and cook until thickened.
  4. Pour gravy over enchiladas in the baking dish. Cover with foil and bake for 25 minutes, then remove foil and bake for another 10 minutes.
