  • 3 tbsp Smooth Peanut Butter For nut-free options, use tahini or omit.
  • 1 tbsp Rice Vinegar Apple cider vinegar can be used as a substitute.
  • 2 tbsp Light Soy Sauce Tamari is a great gluten-free alternative.
  • 1 tbsp Brown Sugar Maple syrup can be a refined sugar-free alternative.
For the Garnish
  • 2 tbsp Chopped Spring Onions Chives can be a substitute.
  • 1 tbsp Sesame Seeds Optional, but recommended for texture.
  • 1 tbsp Lime Juice Lemon juice is an acceptable substitute.

Method
 

Step‑by‑Step Instructions
  1. Cook the instant ramen noodles according to package instructions in boiling water for about 3–4 minutes. Drain and reserve a splash of water.
  2. In a heat-proof bowl, combine the garlic, gochugaru, sesame seeds, and spring onions.
  3. Gently heat sesame oil in a small pan over medium heat, then pour over the chili-garlic mixture.
  4. In the same bowl, whisk together gochujang, peanut butter, rice vinegar, soy sauce, lime juice, and brown sugar.
  5. Add cooked noodles to the sauce and toss to coat. Adjust with reserved noodle water if too thick.
  6. Transfer to serving bowls and garnish with more spring onions and sesame seeds. Serve hot.
