- Start by mincing 4 cloves of garlic and a 1-inch piece of ginger, then set them aside. Dice 2 cucumbers and gather the remaining ingredients.
- In a large skillet, heat a drizzle of sesame oil over medium-high heat. Add 1 pound of ground beef and cook for about 5 minutes, stirring occasionally.
- Once the ground beef is cooked, toss in the minced garlic and ginger. Stir them in and cook for an additional minute.
- Stir in 2 tablespoons of gochujang, 2 tablespoons of soy sauce, and 1 tablespoon of sesame oil. Mix everything together well.
- While the beef is cooking, combine the diced cucumbers with 2 tablespoons of rice vinegar and a sprinkle of sesame seeds. Toss gently.
- On a large serving plate, arrange the spicy ground beef mixture and top it with the cucumber salad. Drizzle additional sesame oil if desired.
