Step-by-Step Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta shells and cook for 10 minutes until al dente. Reserve ½ cup pasta water, then drain.
  2. Sear the Steak: Pat the steak dry, season with salt and pepper. In a skillet, heat olive oil and 2 tablespoons of butter; add steak and sear for 2-3 minutes on each side. Add half of minced garlic in last minute and stir in.
  3. Make the Sauce: In the same skillet, reduce heat and melt remaining butter. Add garlic, sauté until fragrant. Pour in heavy cream, stir and add Italian seasoning and paprika. Simmer for 4-5 minutes.
  4. Whisk in Parmesan: Gradually whisk in Parmesan until melted and smooth. Add reserved pasta water to adjust consistency if necessary.
  5. Combine & Serve: Toss drained pasta shells in sauce, fold in sliced steak, heat through. Adjust seasoning with salt and pepper. Serve immediately with parsley and extra Parmesan.
