  1. In a medium saucepan, combine apple cider, honey, Dijon mustard, and minced garlic. Bring to a gentle simmer over medium heat for about 10 minutes until the glaze thickens and coats the back of a spoon.
  2. Heat oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then place skin-side down in the hot skillet. Sear for 6-7 minutes until golden brown.
  3. Flip the chicken thighs, reduce heat to medium, and cook for an additional 5 minutes until nearly cooked through.
  4. Pour the apple cider glaze over chicken thighs, ensuring each piece is well coated. Cook on medium-low heat for 5-8 minutes, spooning glaze over chicken occasionally.
  5. In a bowl, combine shredded cabbage, carrots, and thinly sliced apple. In a small bowl, whisk together apple cider vinegar, celery seeds, salt, and pepper. Drizzle over the slaw and toss gently.
  6. Plate the sticky apple cider chicken alongside the slaw, garnish with chopped parsley or chives, and enjoy.
